Mexi Tater Tot Casserole

Serves: 6






















Ingredients


  • 1/2 lb of ground beef

  • 2 Mexican chorizo sausages

  • 1/2 onion, diced

  • 2 garlic cloves, minced

  • 1/2 jalapeno, diced

  • 2 tbsp FRESH IS BEST taco seasoning

  • 2 cups corn

  • 1 can black beans

  • 1 bag of tater tots

  • 1 container FRESH IS BEST salsa

  • 2 cups shredded Tex Mex or Cheddar cheese

Directions

  1. Preheat oven to 375F. Grease a baking pan.

  2. Bake tater tots for 25 minutes.

  3. While the tater tots are baking, cook meat over medium heat.

  4. Once meat is browned add onions, jalapenos, garlic and Fresh is Best taco seasoning. Add the corn and black beans cook for 10 minutes.

  5. Remove tater tots from the oven. Top the tater tots with meat mixture. Pour on Fresh is Best salsa and spread evenly. Sprinkle on cheese.

  6. Bake for 15 minutes until casserole is hot and cheese is melted.

  7. Serve with sour cream, Fresh is Best salsa and Fresh is Best guacamole.
