Salsa Baked Eggs
Our version of Baked Eggs, Shakshuka or Eggs in Purgatory. The 3 S's Savoury, Spicy and Saucy!
1 container of FRESH IS BEST salsa
1 bunch chopped kale or spinach (optional)
1/2 cup tomato sauce
1 tsp sugar
1 tsp cumin
1 tsp FRESH IS BEST taco seasoning
salt and pepper, to taste
In a medium pan, sautee spinach or kale till cooked. Remove from pan and set aside.
Add FRESH IS BEST salsa, tomato sauce, sugar, and spices.
Once the sauce is hot, add back kale/spinach. Add eggs and cook till desired firmness.
Top with Queso Fresco cheese, cilantro, and avocado slice. Serve with crispy bread.
