Mexican Meatloaf

Serves: 6


1 ¼ pounds Lean Ground Turkey

1 small Yellow Onion, finely chopped

½ cup unseasoned Breadcrumbs

1 Egg, beaten

1 cup grated Sharp Cheddar or Monterey Jack Cheese

1 cup FRESH IS BEST SALSA, divided

1 cup packed Spinach leaves, chopped

1 (4 oz) can Chopped Green Chilies

1 tsp Chili Powder

¼ tsp Kosher Salt

¼ tsp Black Pepper

Extra Cheese and Salsa for serving, if desired


  1. Preheat oven to 400 degrees.

  2. In a large bowl combine all of the ingredients, using only ¾ cup of the FRESH IS BEST SALSA. Mix well.

  3. Transfer the meatloaf into an ungreased loaf pan. Top with the remaining ¼ cup of FRESH IS BEST SALSA and bake for 45 minutes.

  4. Remove and let stand for 5-10 minutes before slicing. Serve hot.
