Tortilla Chip Margarita Pie

Ingredients


Crust

1 cup FRESH IS BEST YELLOW TORTILLA CHIPS

1/4 cup sugar

1/3 cup margarine/butter, melted

Filling

1 can sweetened condensed milk

2/3 cup frozen limeade

2 tbsp tequila

5 drops green food colouring

1 cup whipping cream

2tsp lime juice

1 lime sliced


Directions

  1. Preheat oven to 375F

  2. Crush Fresh Is Best tortilla chips in a food processor. Process till fine crumbs.

  3. In a bowl, mix together tortilla chips, sugar, and margarine. Pour mixture into a 9" pie pan press up the sides and bottom.

  4. Bake pie for 5 minutes.

  5. While pie is baking, mix condensed milk, limeade, tequila, and food colouring together.

  6. Remove pie from the oven and let it cool.

  7. Whip cream in a bowl till soft peaks form. Fold cream into condensed milk mixture.

  8. Spoon the pie filling into pie crust. Freeze the pie for 4 hours or until firm.

  9. Top pie with extra cream and lime wedges.
