Chicken Tortilla Soup

Perfect for cold winter nights.



  • 1 tbsp olive oil

  • 1 small onion, diced

  • 2 garlic cloves, minced

  • 1 jalapeno, diced (optional)

  • 1 container of FRESH IS BEST salsa

  • 1 tsp cumin

  • 3 cups chicken broth

  • 1 cup frozen corn

  • 1 can black beans (15oz)

  • 2 chicken breasts

  • Salt and pepper, to taste


  • Sour cream

  • Tex mex cheese

  • FRESH IS BEST tortilla chips

  • 1 avocado sliced

  • Cilantro (optional)


  1. Bring chicken broth and chicken breasts to a boil, and then simmer until chicken can be shredded (time depends on whether chicken breasts were frozen or thawed). If thawed, 30 – 45 minutes, if frozen, 1 – 1.5 hours.

  2. Remove chicken breasts from the broth and shred with a fork. Put chicken aside. Add Fresh is Best salsa, cumin, beans, and corn to the pot. If seasoning is needed, add salt and pepper. Return chicken to soup and let it simmer for 20 minutes.

  3. Serve soup with sliced avocado, Fresh is Best tortilla chips, cheese, sour cream, and cilantro.


* Remove chicken to make vegetarian
